French winery owner to join chef Greg Hardesty for five-course wine dinner (indystar)

Recess, chef Greg Hardesty's restaurant at 49th Street and College Avenue,
will host a French wine dinner in May with winery owner Franck-Lin Dalle of
Château de Campuget. The five-course dinner begins at 6:30 p.m. Monday, May 7,
and each course will be paired with a Château de Campuget wine. Throughout the
evening, Dalle will speak about the winery and will answer questions about the
wines. One the menu is a first course of calamari with black bean and spring
vegetable salad paired with a Château de Campuget White 2010. The second
course is a three-onion “Alfredo” with bottarga, chili peppers and chili
flakes Château de Campuget Rosé 2011. The third course will feature pork belly
with sticky rice, dried cherries, bacon, kai-lan stalks and red wine gastrique
with a Château de Campuget Syrah “1753” 2009. A fourth course will include
lamb rib-eye with king oyster mushrooms, roasted tomatoes and arugula with a
Château de Campuget La Sommeliere Syrah 2007. Dessert will be vanilla-roasted
apples with pears and dried apricots and Viognier sabayon served with a
Château de Campuget Viognier 2010 The cost for dinner with wine pairings is
